Bacon-fried Apples
Ingredients
6 slices Henderson’s middle eye bacon
4 granny smith apples, peeled, cored, and sliced
Juice of half a lemon
¼ C brown sugar
2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp ground nutmeg
Instructions
Step 1
Cook bacon in oil over medium heat until bacon is golden. Transfer bacon slices to a plate but reserve fat in the pan.
Step 2
Add apples, brown sugar, cinnamon, ginger and nutmeg to the pan and toss to coat in bacon fat. Cook, stirring often, until the apples are tender and caramelised, 5 to 10 minutes. Squeeze lemon juice over apples and season to taste with salt.
Step 3
If the flavour is enough for you, enjoy as is and eat your bacon separately. If you want a little more bacon goodness, chop up your cooked bacon and sprinkle on top for added texture and flavour. Enjoy warm!
